Huevos Motuleños

2 eggs
2 corn tortillas
1/2 cup black beans, cooked and blended/mashed
2 tbs queso fresco
1 cup Rose Marie the Hot Tomato
peas & diced ham optional
rajas optional

1 plantain, ripe

grape seed oil to fry
butter/oil spray

Heat black beans, a microwave may be used,  just make sure to cover the beans so they don’t pop and make a mess. Heat Rose Marie, this too can be done in the microwave or a sauce pan.

In a small frying pan heat 2 tbs of oil. Slice ripe plantain in 1/4 inch thick pieces on the diagonal. They should take 45 seconds per side. Be careful not to burn. You want a slight crunch but also a sticky-gooey consistence in the middle. Remove and drain any excess oil on a paper towel or paper bag.

Melt butter or spray PAM in a frying pan. Crack egg in a bowel before putting in pan to make sure no shells accidentally get cooked. Fry eggs to desired, over medium. While eggs are cooking heat tortillas.

Assembly. Dip tortillas in black beans, or spread with spoon. Place on plate, top each tortilla with an egg, pour sauce over eggs, and sprinkle with queso fresco, rajas, or peas, and diced ham.  Garnish with fried plantains.

Serve with hot tortillas.
